Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tsp taco seasoning
  • 1 tsp salt
  • 4 large burrito tortillas
  • 2 cups shredded Mexican cheese
  • salsa
  • sour cream
  • limes
  • Organic olive oil spray
Perfect for an afternoon snack, family-friendly bite, or an easy dinner, these cheesy chicken quesadillas are ready in a flash – no need to order take-out anymore!

INSTRUCTIONS

  1. In a mixing bowl, toss together cubed chicken with the taco seasoning and salt.
  2. Place chicken in the air fryer and spray with organic olive oil spray. Air Fry at 400°F / 205°C for 6-7 Minutes, or until golden and cooked through. Set aside.
  3. Preheat the air fryer to Air Fry at 350°F / 180°C. Place one large tortilla in the air fryer basket. Sprinkle with ½ cheese and ½ cooked chicken. Top with another large tortilla and spray with organic olive oil spray.
  4. Air Fry for 7-8 Minutes, until the tortillas are slightly crunchy and the cheese is melted. Cut into quarters and serve with salsa, sour cream, and sliced limes.
