Breakfast Sandwiches with Chicken Maple Sausage

Ingredients
  • 12 eggs
  • 1 cup plain yogurt
  • 2 1/2 tsp. sea salt, divided
  • 3/4 tsp. black pepper, divided
  • 2 lb. ground chicken
  • 1/3 cup maple syrup
  • 2 tbsp. olive oil
  • 1 tsp. cinnamon
  • 1 tsp. poultry seasoning
  • 1/2 tsp. dried sage
  • 1 tsp. garlic powder
  • Red pepper flakes (optional, to taste)
  • 9-10 English muffins
  • 9-10 slices of cheese (your choice)
Instructions
  • Preheat your oven to 380°F / 193°C. Line a baking dish with parchment paper.
  • Blend the eggs, plain yogurt, ½ teaspoon of sea salt, and ¼ teaspoon of pepper until smooth. Pour the mixture into the prepared baking dish and bake for 15 minutes, until the eggs are fully cooked through. Set aside to cool.
  • In a large bowl, combine the ground chicken, maple syrup, olive oil, cinnamon, poultry seasoning, sage, garlic powder, 2 teaspoons of sea salt, ½ teaspoon of pepper, and red pepper flakes (if using). Mix until well combined.
  • Preheat the air fryer by selecting Air Fry and setting the temperature to 375°F / 190°C. While the appliance preheats, shape the sausage mixture into 9-10 equal-sized patties.
  • Place the patties in the air fryer basket, making sure not to crowd the basket (work in batches if needed). Air Fry for 6-8 minutes, flipping halfway through, until browned and cooked through. Set aside.
  • Cut the egg bake into circles or squares to fit your English muffins. On each muffin half, layer a slice of cheese, an egg patty, and a sausage patty.
  • Wrap each sandwich in parchment paper. Freeze the sandwiches until ready to reheat.
Notes
  • REHEATING INSTRUCTIONS: Vortex Plus: Preheat the Vortex Plus to 350°F / 175°C. Let the sandwich sit at room temperature for a few minutes while the oven preheats. Place the sandwich on the air fryer tray and Air Fry for 5 minutes, until heated through or when the cheese is melted.
