Preheat your oven to 380°F / 193°C. Line a baking dish with parchment paper.
Blend the eggs, plain yogurt, ½ teaspoon of sea salt, and ¼ teaspoon of pepper until smooth. Pour the mixture into the prepared baking dish and bake for 15 minutes, until the eggs are fully cooked through. Set aside to cool.
In a large bowl, combine the ground chicken, maple syrup, olive oil, cinnamon, poultry seasoning, sage, garlic powder, 2 teaspoons of sea salt, ½ teaspoon of pepper, and red pepper flakes (if using). Mix until well combined.
Preheat the air fryer by selecting Air Fry and setting the temperature to 375°F / 190°C. While the appliance preheats, shape the sausage mixture into 9-10 equal-sized patties.
Place the patties in the air fryer basket, making sure not to crowd the basket (work in batches if needed). Air Fry for 6-8 minutes, flipping halfway through, until browned and cooked through. Set aside.
Cut the egg bake into circles or squares to fit your English muffins. On each muffin half, layer a slice of cheese, an egg patty, and a sausage patty.
Wrap each sandwich in parchment paper. Freeze the sandwiches until ready to reheat.
Notes
