Ingredients

  • 12 eggs
  • 1 cup plain yogurt
  • 2 1/2 tsp. sea salt, divided
  • 3/4 tsp. black pepper, divided
  • 2 lb. ground chicken
  • 1/3 cup maple syrup
  • 2 tbsp. olive oil
  • 1 tsp. cinnamon
  • 1 tsp. poultry seasoning
  • 1/2 tsp. dried sage
  • 1 tsp. garlic powder
  • Red pepper flakes (optional, to taste)
  • 9-10 English muffins
  • 9-10 slices of cheese (your choice)

These hearty breakfast sandwiches are perfect for meal prepping or feeding a crowd. The combination of tender chicken maple sausage, creamy scrambled eggs, and gooey cheese sandwiched between a toasted English muffin makes for the ultimate grab-and-go breakfast. Freeze them ahead of time and enjoy a delicious meal with minimal effort on busy mornings.

INSTRUCTIONS

  1. Preheat your oven to 380°F / 193°C. Line a baking dish with parchment paper.
  2. Blend the eggs, plain yogurt, ½ teaspoon of sea salt, and ¼ teaspoon of pepper until smooth. Pour the mixture into the prepared baking dish and bake for 15 minutes, until the eggs are fully cooked through. Set aside to cool.
  3. In a large bowl, combine the ground chicken, maple syrup, olive oil, cinnamon, poultry seasoning, sage, garlic powder, 2 teaspoons of sea salt, ½ teaspoon of pepper, and red pepper flakes (if using). Mix until well combined.
  4. Preheat the air fryer by selecting Air Fry and setting the temperature to 375°F / 190°C. While the appliance preheats, shape the sausage mixture into 9-10 equal-sized patties.
  5. Place the patties in the air fryer basket, making sure not to crowd the basket (work in batches if needed). Air Fry for 6-8 minutes, flipping halfway through, until browned and cooked through. Set aside.
  6. Cut the egg bake into circles or squares to fit your English muffins. On each muffin half, layer a slice of cheese, an egg patty, and a sausage patty.
  7. Wrap each sandwich in parchment paper. Freeze the sandwiches until ready to reheat.

Notes

REHEATING INSTRUCTIONS: Vortex Plus: Preheat the Vortex Plus to 350°F / 175°C. Let the sandwich sit at room temperature for a few minutes while the oven preheats. Place the sandwich on the air fryer tray and Air Fry for 5 minutes, until heated through or when the cheese is melted.
