In a medium mixing bowl, combine shishito peppers, 1 tablespoon olive oil, and 2 tablespoons everything bagel spice. Mix to combine.
Air Fry shishitos at 400°F / 205°C for 7-9 minutes, or until blistered and fragrant.
While shishitos are frying, prepare the dipping sauce. In a medium mixing bowl, whisk together 4 ounces of cream cheese, 1 tablespoon sour cream, ¼ cup mayonnaise, 1 tablespoon white wine vinegar, 1 garlic clove grated, and salt to taste. Makes about 1 cup dipping sauce.
Sprinkle shishitos with extra seasoning and serve while warm.
