Beef Pho with Noodles
On a cold day, this beef pho will be comfort you and warm you up. This aromatic keto version of the Vietnamese noodle soup is very tasty and can be prepared in a very short time.

Ingredients
  • 1.5 qt beef broth
  • 1 lb sirloin steak
  • 2 spring onions
  • 2 tbsp fresh ginger
  • 1 tsp fish sauce
  • ¾ tsp star anise
  • 1 stick cinnamon
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 7 oz Zucchini
  • 1 lime
  • 1 tbsp Fresh coriander
Instructions
  • Place all ingredients except zucchini noodles in a 6-qt (5.5 L) Instant Pot.
  • Close the lid, press Pressure Cook or Manual Cook and set time to 20 Minutes. Once the time is up, open the valve to quickly release the pressure.
  • Remove the meat and cut into thin strips. Serve the soup in bowls and add the sirloin steak strips and the zucchini noodles if you wish.
  • Garnish with the lime wedges and coriander leaves.
