Beef Pho with Noodles

Ingredients

  • 1.5 qt beef broth
  • 1 lb sirloin steak
  • 2 spring onions
  • 2 tbsp fresh ginger
  • 1 tsp fish sauce
  • ¾ tsp star anise
  • 1 stick cinnamon
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 7 oz Zucchini
  • 1 lime
  • 1 tbsp Fresh coriander
On a cold day, this beef pho will be comfort you and warm you up. This aromatic keto version of the Vietnamese noodle soup is very tasty and can be prepared in a very short time.

INSTRUCTIONS

  1. Place all ingredients except zucchini noodles in a 6-qt (5.5 L) Instant Pot.
  2. Close the lid, press Pressure Cook or Manual Cook and set time to 20 Minutes. Once the time is up, open the valve to quickly release the pressure.
  3. Remove the meat and cut into thin strips. Serve the soup in bowls and add the sirloin steak strips and the zucchini noodles if you wish.
  4. Garnish with the lime wedges and coriander leaves.
