Aubergine Katsu Burger


  • 1 Aubergine peeled
  • 40 g plain flour
  • 120 g panko breadcrumbs
  • 1 egg
  • 1 tsp water
  • 1 tbsp oil
  • Salt & pepper as needed
  • 100 g cabbage
  • 3 tbsp mayonnaise
  • Chilli flakes as needed
  • ½ garlic clove
  • 2 Brioche bun
  • Cut the aubergine into 1.5 cm disks and season both sides with salt and freshly ground pepper.
  • Set up 3 shallow dishes, one with the flour, seasoned with a pinch of salt and pepper, one with the lightly beaten egg, mixed with water, and one with the breadcrumbs.
  • Dip the aubergine in the flour, then the egg and then the breadcrumbs covering the aubergine disk to form an even coating.
  • Place the prepared aubergine in the air fryer basket onto a lightly oiled rack. Select Air Fry and set the temperature to 190°C / 375°F and the time to 12 Minutes. Ignore when prompted to Add Food as it will already be inside and flip the aubergine over when prompted to Turn Food.
  • While the aubergine cooks make the slaw by combining the shredded cabbage with salt, pepper, mayonnaise, chilli flakes and garlic in a bowl.
  • To plate up, smear some mayonnaise on the base of your roll, then top with your aubergine and slaw and serve immediately.
