Ingredients

  • 1 Aubergine peeled
  • 40 g plain flour
  • 120 g panko breadcrumbs
  • 1 egg
  • 1 tsp water
  • 1 tbsp oil
  • Salt & pepper as needed
  • 100 g cabbage
  • 3 tbsp mayonnaise
  • Chilli flakes as needed
  • ½ garlic clove
  • 2 Brioche bun

INSTRUCTIONS

  1. Cut the aubergine into 1.5 cm disks and season both sides with salt and freshly ground pepper.
  2. Set up 3 shallow dishes, one with the flour, seasoned with a pinch of salt and pepper, one with the lightly beaten egg, mixed with water, and one with the breadcrumbs.
  3. Dip the aubergine in the flour, then the egg and then the breadcrumbs covering the aubergine disk to form an even coating.
  4. Place the prepared aubergine in the air fryer basket onto a lightly oiled rack. Select Air Fry and set the temperature to 190°C / 375°F and the time to 12 Minutes. Ignore when prompted to Add Food as it will already be inside and flip the aubergine over when prompted to Turn Food.
  5. While the aubergine cooks make the slaw by combining the shredded cabbage with salt, pepper, mayonnaise, chilli flakes and garlic in a bowl.
  6. To plate up, smear some mayonnaise on the base of your roll, then top with your aubergine and slaw and serve immediately.
