Arroz Chaufa (Peruvian Fried Rice) With Shrimp

Ingredients

  • 2 tbsp olive oil
  • 1 carrot
  • 1 garlic clove
  • 2 cups shrimp
  • 1 cup long-grain rice
  • 1 green onion
  • 1 tbsp ginger
  • 4 tbsp soy sauce
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1½ cup water
  • 2 tbsp fresh cilantro
  • 1 egg
  • Olive oil

INSTRUCTIONS

  1. Place the stainless steel inner pot inside the Instant Pot®. Add 2 tbsp olive oil. Press Saute for 7 Minutes and add the carrots with the garlic.
  2. Once the time is up, add the shrimp, rice, half the green onion, grated ginger, soy sauce, salt, pepper, and 1 ½ cups of water (preferably hot).
  3. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set the time to 4 Minutes. When done, press Cancel and turn the steam release handle to Venting.
  4. You can serve it with chopped egg omelet, green onion, and cilantro on top.
  5. For the egg omelet: Beat 1 egg with a fork, add green onion and cilantro, put in a hot pan and turn over when cooked. Cut into strips and sprinkle over the rice. You can add raw green onion and cilantro on top to garnish the dish.
