Ingredients
  • ½ lb. ground beef
  • ⅓ cup breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • ½ tsp. dried oregano
  • Salt and pepper to taste
  • 2 tbsp. olive oil
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 1 can (14.5 0z) diced tomatoes
  • 2 tbsp. tomato paste
  • 6 cups chicken or vegetable broth
  • ¾ cup alphabet pasta
  • 1 ½ tsp. Italian seasoning
  • Salt and pepper to taste
Instructions
  • In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix well and form into small meatballs about 1 ½ inch in diameter.
  • Turn on the Instant Pot and select the Sauté setting. Preheat the inner pot for 1.5 minutes on Sauté, More/High. Add olive oil to the pot as it heats up.
  • When the olive oil is hot and shimmering, add the meatballs to the heated pot and Sauté for about 5 minutes until browned. Remove the meatballs and set aside.
  • Add the diced carrots, celery and onion to the pot, and cook for 3 minutes until softened. Then, add minced garlic and cook for another 1 minute until fragrant.
  • Stir in the tomato paste, Italian seasoning, salt, and pepper and cook for 1 minute, then select Cancel.
  • Add chicken broth, diced tomato, alphabet pasta and cooked meatballs back to the pot and stir to combine.
  • Secure the lid on the Instant Pot and set the valve to the sealing position.
  • Select the pressure cook setting. Pressure Cook on High for 5 minutes. When the time is up, carefully quick release the pressure.
  • Once done, select Cancel and remove the lid.
  • Taste and adjust seasoning if necessary. Enjoy!
