Ingredients

  • ¾ cup panko breadcrumbs
  • 1 cup whole milk
  • 2 eggs
  • 2 garlic cloves, grated
  • ½ yellow onion, minced
  • 1 ¼ lb. ground beef
  • 1 lb. ground pork
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • ¼ cup ketchup
  • 1 tbsp. brown sugar
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. Worcestershire sauce
Ahh the classic meatloaf! Savory, satisfying, and easy to make. We love our meatloaf with mashed potatoes, but any spud will do.

INSTRUCTIONS

  1. In a large mixing bowl, soak the breadcrumbs with the milk until rehydrated, about 2 minutes. Add the eggs and mix until combined.
  2. Add the grated garlic, minced onion, ground beef, ground pork, salt, and black pepper to the bowl. Using your hands, mix until combined.
  3. This recipe will make two loaves. Divide the meat mixture in half and shape each loaf inside the air fryer basket into a rectangular shape. These are rustic meatloaves which will create more dark and crunchy pieces. Do not fuss about the final shape.
  4. In a small bowl prepare the glaze. Whisk the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce. Spoon half the glaze over both loaves, reserving the remainder for later.
  5. Air Fry at 375°F / 190°C for 27-30 minutes. After 15 minutes, spoon the remaining glaze on top of the meatloaves. Remove from the air fryer basket. Let the meatloaves cool for a few minutes before slicing. Serve with mashed potatoes!
