Air Fyer Meatloaf

  • ¾ cup panko breadcrumbs
  • 1 cup whole milk
  • 2 eggs
  • ½ yellow onion, minced
  • 2 garlic cloves, grated
  • 1 ¼ lb. ground beef
  • 1 lb. ground pork
  • 1 tbsp salt
  • 1 tbsp black pepper
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • In a large mixing bowl, soak the breadcrumbs with the milk until rehydrated, about 2 minutes. Add the eggs and mix until combined.
  • Add the minced garlic, onion, ground beef, ground pork, salt, and black pepper to the bowl. Using your hands, mix until combined.
  • This recipe will make two loaves. Divide the meat mixture in half and shape each loaf inside the air fryer basket into a rectangular shape. These are rustic meatloaves which will create more dark and crunchy pieces. Do not fuss about the final shape.
  • In a small bowl prepare the glaze. Whisk the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce. Spoon half the glaze over both loaves, reserving the remainder for later.
  • Air Fry at 375°F / 190°C for 27-30 Minutes. After 15 minutes, spoon the remaining glaze on top of the meatloaves. Remove from the air fryer basket. Let the meatloaves cool for a few minutes before slicing. Serve with mashed potatoes!
