Air Fryer Lid Navajo (Fry Bread) Tacos

Ingredients
  • 2 cups all-purpose flour
  • 1 tsp kosher salt
  • 1 tbsp baking powder
  • 3/4 cup milk
  • 1 lb ground beef
  • 1 oz package taco seasoning
  • 2 tbsp Water
  • 2 tbsp cooking oil
  • 15 oz can pinto beans
  • 2 tbsp salsa

Instructions
  • In a medium bowl, combine Fry Bread Mixture ingredients with a fork until uniform. Cut into 6 equal pieces, roll each piece into a smooth ball, cover with a towel and set aside.
  • Add ground beef to the Instant Pot. Using the display panel select the SAUTE function and adjust to HIGH.
  • Brown the meat until no pink remains. Add 2 tbsp water and taco seasoning. Cook and stir 2 minutes more. Select CANCEL. 
  • Transfer pot contents to a shallow dish and cover loosely with foil. Rinse out the pot and return it to the cooker base. 
  • Use fingers to press each of the 6 balls into flat discs about 5 inches in diameter. Edges should be slightly thicker than the centers.
  • Pour 2 tbsp oil onto a shallow plate and coat both sides of one piece of the flattened dough in oil, then lay it in the Air Fryer Basket. Insert the Broil Tray, coat a second piece of flattened dough in oil and place it on the Broil Tray.
  • Place the Air Fryer Basket on its base, lower into the pot and secure the Air Fryer Lid.
  • Using the display panel select the AIR FRY program. Adjust the temperature to 375°F and the time to 10 minutes, then select START.
  • When the display indicates “Turn Food” remove the lid and place it on the protective pad. Move the top fry bread to the bottom and the bottom fry bread to the top (do not turn them over). Replace the Air Fryer Lid to resume the program.
  • When program is complete, remove the lid and place it on the protective pad. Remove the completed fry bread to a plate and cover with a towel. Repeat with remaining dough.
  • Meanwhile, combine pinto beans and 2 tbsp salsa and warm on the stovetop or in the microwave. 
  • When all fry bread is complete, serve warm topped with beans, seasoned beef and your choice of toppings, then fold and eat like a taco
