Ingredients
  • ½ cup ripe plantain (about 1 large plantain)
  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • Organic cooking spray, as needed
  • 2 tsp. cinnamon
  • ¼ cup sugar
  • Caramel sauce, for topping
  • Toasted coconut flakes, for topping
Instructions
  • Mash the plantain into a smooth purée—you should have at least ½ cup.
  • In a bowl, mix the flour and baking powder.
  • Add the mashed plantain to the flour mixture and knead with your hands until a dough forms. It will be slightly sticky.
  • Pinch off small pieces of dough and roll them into balls. Repeat until all the dough has been used.
  • Lightly spray the air fryer basket with organic cooking oil, then arrange the dough balls inside. Give the tops of the dough balls a quick spray as well.
  • Air Fry at 350°F / 180°C for 5 minutes or until puffy and golden brown. They may look dry on the outside—this is normal.
  • While they cook, mix cinnamon and sugar in a bowl.
  • For a donut-like coating, roll each warm ball in melted butter, then coat evenly in the cinnamon sugar mixture.
  • Serve warm, topped with caramel drizzle and toasted coconut flakes.
