Contrary to popular belief, okra is in fact a green fruit with a mild flavor and satisfying crunch. Easy, cornmeal crusted okra is a beloved Southern recipe that is equal parts easy and delicious. Make sure to coat these in cooking spray to get a golden crust!

Ingredients
  • 1 lb. fresh okra
  • 2 eggs
  • 2 tbsp Water
  • ¾ c yellow cornmeal
  • 1 c flour
  • ½ tsp cayenne
  • ½ tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • Vegetable cooking spray
Instructions
  • In a medium mixing bowl, beat together eggs with cold water.
  • In a medium mixing bowl, combine half of the flour, cornmeal, cayenne, paprika, onion powder, garlic powder, salt, and black pepper.
  • In a separate bowl, toss sliced okra with half of the flour. Shake off excess and pour the remaining flour into the cornmeal bowl.
  • Using one hand, coat the floured okra pieces in the egg mixture. Use your other hand to coat the egg-washed okra in the seasoned cornmeal. Re-dip okra pieces in the egg then the breading if the coating does not stick.
  • Spread the breaded okra into the appliance in one layer, careful not to crowd. Liberally coat all okra with vegetable spray.
  • Air Fry in batches at 400°F for 13 – 15 Minutes, rotating pieces after 8-10 Minutes. Spray with vegetable cooking spray after rotating. Continue working in batches until all okra are fried.
  • Serve warm lemon slices or your favorite dipping sauce.
