Air Fried Chuck Roast with Squash and Potatoes


  • 2 ½ lb. boneless chuck roast
  • 1 large Russet potato
  • 1 Honeynut squash
  • Salt as
  • Pepper as
  • Liberally salt and pepper both sides of the boneless chuck roast.
  • Preheat the air fryer to 400°F / 205°C. Add the chuck roast and air fry for 15 Minutes without disturbing.
  • After 15 Minutes , reduce the heat to 325°F / 160°C. Turn the chuck roast over and sprinkle the cut vegetables around it. Air Fry for another 15-25 Minutes, or until desired doneness. Measure the internal temperature with a meat thermometer (145°F for Medium). Leave the vegetables in for 5-10 more minutes for additional color.
  • Remove the chuck roast from the air fryer and allow to rest for 15 Minutes before slicing. Drizzle some of the reserved juice from the bottom of the air fryer basket over the top. Serve with roasted vegetables.
