Ingredients

  • 1 1/2 cups full-fat coconut milk (shake well before using)
  • 1/4 - 1/3 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • Pinch of fine sea salt
  • Mix-Ins
  • 2 tbsp. toasted sweetened coconut flakes
  • 2 tbsp. mini chocolate chips

Coconut up front, almond underneath, chocolate throughout. Made in the InstantChill™ Ice Cream Maker, it’s simple on paper but exciting on the tastebuds.

INSTRUCTIONS

  1. In a medium bowl, whisk together the coconut milk, sugar, vanilla extract, almond extract and salt until smooth and the sugar has dissolved.
  2. Taste the base before churning. Coconut milks vary in sweetness, and the flavor will mellow slightly once chilled—adjust sugar as needed.
  3. Pour the mixture into the InstantChill™ Mixing Bowl.
  4. Use the Non-Dairy program, set to 24 minutes.
  5. At the 3-minute Add In reminder, add the toasted coconut flakes and mini chocolate chips through the lid's mix-in window.
  6. Once the program is complete, scoop the ice cream into bowls or containers and enjoy immediately. Freeze further for a firmer texture.
