Zucchini Croquettes with Potato

Yield: 8 Servings

Ingredients

  • 1 large zucchini
  • 2 medium yukon gold potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp pepper

INSTRUCTIONS

  1. "Grate the zucchini, put in a colander, and lightly squeeze to drain excess water."
  2. "Peel the potatoes and slice into quarters. Cook in boiling water until fork tender. Crush with a fork until a clumpy mash forms."
  3. Mix the potatoes with the zucchini, add the olive oil, salt, garlic and pepper.
  4. Form the mixture into medium balls.
  5. On the Instant Vortex control panel, press Air Fry, then set time to 15 Minutes and temperature to 355ºF (180ºC). Press Start.
  6. When Add Food appears on the display, remove the basket and add the croquettes. Put the basket back in the Instant Vortex.
  7. Turn them over when indicated and enjoy.
