Zucchini Croquettes with Potato

Ingredients
  • 1 large zucchini
  • 2 medium yukon gold potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp pepper
Instructions
  • "Grate the zucchini, put in a colander, and lightly squeeze to drain excess water."
  • "Peel the potatoes and slice into quarters. Cook in boiling water until fork tender. Crush with a fork until a clumpy mash forms."
  • Mix the potatoes with the zucchini, add the olive oil, salt, garlic and pepper.
  • Form the mixture into medium balls.
  • On the Instant Vortex control panel, press Air Fry, then set time to 15 Minutes and temperature to 355ºF (180ºC). Press Start.
  • When Add Food appears on the display, remove the basket and add the croquettes. Put the basket back in the Instant Vortex.
  • Turn them over when indicated and enjoy.
