Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion
  • ½ cup chopped roasted peanuts
  • 1-½ tbsp minced fresh ginger
  • 4 cloves garlic
  • 1 tsp salt
  • 3 cups vegetable broth
  • ⅓ cup unsweetened peanut butter
  • 2 sweet potatoes
  • 1 can (28 ounces) whole tomatoes
  • 1 bunch kale or Swiss chard
  • ¼ tsp ground red pepper

INSTRUCTIONS

  1. Press Sauté; heat oil in pot. Add onion; cook and stir 5 Minutes or until softened. Add peanuts, ginger, garlic and salt; cook and stir 1 Minute. Stir in broth and peanut butter until blended. Add sweet potatoes, tomatoes, kale and red pepper; mix well.
  2. Secure lid and move pressure release valve to Sealing position. Press Pressure Cook or Manual; cook at High Pressure 3 Minutes.
  3. When cooking is complete, use quick release.
