Vegan Fritters

Ingredients
  • 2 cups pumpkin
  • 1 tsp olive oil
  • ½ cup whole grain oatmeal
  • ½ cup flour
  • 3 tbsp melted coconut oil or olive oil
  • 1 tsp activated chia
Instructions
  • Using the Instant Vortex panel, press Roast, set the time to 10 Minutes and the temperature to 400°F (205°C). Press Start.
  • Once Add Food appears on the display, add the diced pumpkin, the tsp olive oil and mix before closing the drawer.
  • When the time is up, remove the roasted squash and mash with a fork until pureed.
  • In a bowl, put the pumpkin puree and all the other ingredients. With your hands, knead until there is a uniform dough. Wrap the dough in plastic wrap and refrigerate for 10-15 Minutes so it firms up.
  • Flour an area of kitchen counter surface use rolling pin to stretch out the dough. Cut the fritters using a cookie cutter or a glass of the size you want.
  • With a fork, prick the top, middle and bottom and then using the Instant Vortex panel, press Air Fry, set the time to 3 Minutes and the temperature to 400°F (205°C). Press Start. When the time is up, take out the sopaipillas and enjoy.
