Using the Instant Vortex panel, press Roast, set the time to 10 Minutes and the temperature to 400°F (205°C). Press Start.
Once Add Food appears on the display, add the diced pumpkin, the tsp olive oil and mix before closing the drawer.
When the time is up, remove the roasted squash and mash with a fork until pureed.
In a bowl, put the pumpkin puree and all the other ingredients. With your hands, knead until there is a uniform dough. Wrap the dough in plastic wrap and refrigerate for 10-15 Minutes so it firms up.
Flour an area of kitchen counter surface use rolling pin to stretch out the dough. Cut the fritters using a cookie cutter or a glass of the size you want.
With a fork, prick the top, middle and bottom and then using the Instant Vortex panel, press Air Fry, set the time to 3 Minutes and the temperature to 400°F (205°C). Press Start. When the time is up, take out the sopaipillas and enjoy.
