Cut the potatoes into wedges, about ½ inch thick. Place in a large mixing bowl and cover with cold water. Allow the potatoes to soak for at least 30 minutes then drain, rinse clean, and pat dry.
Return the potatoes to the large mixing bowl and toss with 1 tbsp vegetable oil and sprinkle with salt.
Place in the air fryer basket and Air Fry at 375°F / 190°C for 12-14 Minutes, or until cooked through.
Generously salt and pepper the rib-eye steaks. Push the potatoes to one side of the air fryer basket and add the rib-eye steaks to the other. Spray everything with cooking spray.
Air Fry at 400°F / 205°C for 6-8 Minutes, or until the fries are golden brown. To note, 6 minutes of air fryer time for the steaks will produce a beautiful medium rare. Increase in 2-minute intervals for more doneness.
Allow the steaks to rest for at least 10 minutes. Toss the fries with additional salt to taste.
In a small bowl, toss the arugula with juice from the lemons and a pinch of salt.
Cut the steaks into 1-inch slices, serve with the quick salad, and Parmesan-dusted French fries
