Spicy Korean Cauliflower Bites

Ingredients
  • 1 lb. cauliflower
  • 2 eggs
  • 2/3 cup cornstarch
  • 1 tsp. fresh garlic
  • 1 tsp. fresh ginger
  • 1 tsp. onion powder
  • 2 tsp. smoked paprika
  • 1 tsp. sea salt
  • 1 lb. panko
  • 1/2 cup Korean chili flakes
  • 1/2 cup Korean red pepper paste
  • 1/2 cup minced garlic
  • 2 cups of corn syrup
  • 1 cup ketchup
  • 1 cup crushed pineapple
  • 1 tbsp. white vinegar
  • 2 tbsp. sunflower oil
Instructions
  • Cut the cauliflower into small bite sized pieces.
  • In a bowl, mix the eggs and cornstarch until smooth.
  • Add garlic, ginger, onion powder, smoked paprika, and salt, then mix well to combine.
  • Dip each cauliflower piece into the batter, then coat with panko, pressing with your hands to ensure it sticks. Repeat for all cauliflower bites.
  • Set Vortex Plus to 400°F / 204°C for 30 minutes.
  • Line a sheet tray with parchment paper or aluminum foil and spray with non-stick spray.
  • When Vortex Plus beeps to 'Add Food,' place the tray inside and set the time for 30 minutes. At 15 minutes, flip the cauliflower when prompted.
  • While the cauliflower cooks, start on the Spicy Korean BBQ sauce. Using your Instant Pot, select the Sauté feature and drizzle oil in the bottom.
  • Once the pot is hot, lightly fry the garlic for 1-2 minutes.
  • Add all remaining ingredients and gently simmer on low for 20 minutes.
  • If the sauce finishes before the cauliflower bites, press Keep Warm. Once the cauliflower bites are done, toss them in the Spicy Korean BBQ sauce and enjoy!
