Ingredients

  • 1 lb. cauliflower, diced
  • 2 eggs
  • ⅔ cup cornstarch
  • 1 tsp. fresh garlic, grated
  • 1 tsp. fresh ginger, grated
  • 1 tsp. onion powder
  • 2 tsp. smoked paprika
  • 1 tsp. sea salt
  • 1 lb. panko
  • ½ cup Korean chili flakes
  • ½ cup Korean red pepper paste
  • ½ cup minced garlic
  • 2 cups of corn syrup
  • 1 cup ketchup
  • 1 cup crushed pineapple, puréed
  • 1 tbsp. white vinegar
  • 2 tbsp. sunflower oil

INSTRUCTIONS

  1. Cut the cauliflower into small bite sized pieces.
  2. In a bowl, mix the eggs and cornstarch until smooth.
  3. Add garlic, ginger, onion powder, smoked paprika, and salt, then mix well to combine.
  4. Dip each cauliflower piece into the batter, then coat with panko, pressing with your hands to ensure it sticks. Repeat for all cauliflower bites.
  5. Set Vortex Plus to 400°F / 204°C for 30 minutes.
  6.  Spray the basket with non-stick spray.
  7. When Vortex Plus beeps to 'Add Food,' place the tray inside and set the time for 30 minutes. At 15 minutes, flip the cauliflower when prompted.
  8. While the cauliflower cooks, start on the Spicy Korean BBQ sauce. Using your Instant Pot, select the Sauté feature and drizzle oil in the bottom.
  9. Once the pot is hot, lightly fry the garlic for 1-2 minutes.
  10. Add all remaining ingredients and gently simmer on low for 20 minutes.
  11. If the sauce finishes before the cauliflower bites, press Keep Warm. Once the cauliflower bites are done, toss them in the Spicy Korean BBQ sauce and enjoy!
