Spiced Coffee-Braised Roast Beef

Ingredients
  • 2 tbsp dark roast instant coffee
  • 1/2 tbsp smoked paprika
  • 1 tsp chilli flakes
  • 1 tsp chilli powder
  • 1/2 tbsp salt
  • 1/2 tbsp ground black pepper
  • 3 lbs beef for roasting
  • 3 tbsp olive oil
  • 2 tbsp balsamic or red wine vinegar
  • 1 onion
  • 6 mushrooms
  • 1/2 cup dark roast coffee
  • 1 cup beef stock
  • 2 tbsp orange juice
  • 2 tbsp orange zest
Instructions
  • Mix Dry Rub ingredients in a large mixing bowl. Rub mixture all over beef.
  • Select SAUTÉ, HIGH. Select START. Add olive oil to inner pot.
  • When the oil is hot, add and sauté onions for 2-3 minutes.
  • Add sliced mushrooms and sauté for 2 more minutes.
  • Add vinegar, orange zest, orange juice, brewed coffee, beef stock, and beef to the pot.
  • Press CANCEL. Secure lid for pressure cooking.
  • Select PRESSURE COOK, HIGH for 50 minutes (00:50). Select START.
  • Open lid and carefully take out the beef. Let it rest for 10 minutes, then slice.
  • Place vegetables from the pot onto a plate, lay beef slices on top. Ladle some of the sauce over beef and vegetables.
Notes
  • TIP: Cut beef into chunks before cooking for a thoroughly cooked,pull-apart pot roast.
