Slow Cooker Peanut Chicken
We love a good soupy stew served over warm rice! This peanut butter chicken is ready in a flash, and perfect for weeknight meals. Freeze any extras to make meal planning easy.

Ingredients
  • 1 ½ lb boneless skinless chicken breast diced into 2 inch cubes
  • 2 tsp salt
  • 1 tbsp coconut oil
  • 5 garlic cloves
  • ¾ cup peanut butter
  • 2 cups chicken broth
  • 3 red bell peppers
  • 1/3 cup soy sauce
  • 3 tbsp brown sugar
  • 5 limes
  • 1 cup roasted peanuts
  • White rice

Instructions
  • Sprinkle the diced chicken breast with the salt. Turn on the Sauté function at 320°F for 20 Minutes. Melt the coconut oil in the pot. Brown the chicken on all sides, working in batches as to not overcrowd the pot. Return all chicken back to the pot.
  • Add the minced garlic, peanut butter, chicken broth and whisk until combined. Stir in the bell peppers, soy sauce, and brown sugar.
  • Place the lid on top and Slow Cook on High for 2 Hours 30 Minutes, or on Low for 5 Hours, stirring occasionally.
  • After the time, remove the lid and add the lime juice and roasted peanuts. Serve the chicken with white rice and top with scallions.
