Slow Cooked Turkey Meatballs in Marinara Sauce

Ingredients
  • 1 tbsp olive oil
  • 1/2 yellow onion
  • 2 garlic cloves
  • 1 lb ground turkey
  • 1/2 cup fresh parsley
  • 1/4 cup fresh basil
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper
  • 28 oz can crushed tomatoes
  • 14 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 yellow onion
  • 2 garlic cloves
  • 1 tbsp fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • grated parmesan cheese
  • Freshly chopped basil
Instructions
  • Select SEAR/SAUTE – High – 10 minutes and press START.
  • When pot is preheated, add 1 tbsp of oil to the inner pot and add the onions. Sauté the onions for 5 minutes, stirring occasionally.
  • Add the garlic and stir well. Press CANCEL.
  • Transfer the onion and garlic to a large bowl.
  • Add the remaining ingredients for the meatballs to the bowl and mix to combine well.
  • Use your hands to gently roll out the meatballs, about 1.5 inches in diameter. This makes about 15-18 meatballs.

    Note: Be gentle rolling out the meatballs. Ground turkey is softer than ground beef and the mixture will be very soft until cooked through and firm.)
  • Select SEAR/SAUTE – High – 10 minutes and press START.
  • When the Instant Pot is preheated, add 1 tbsp of oil to the inner pot and add the onions. Sauté the onions for 5 minutes, stirring occasionally.
  • Add the garlic and stir well. Press CANCEL.
  • Add the tomato paste, stir well and cook for 1 minute.
  • Add the remaining ingredients for the sauce and stir well.
  • Gently place the turkey meatballs into the pot, and use a spoon to gently push the meatballs down, and spoon sauce over the top of the meatballs so they are coated well in the sauce.
  • Select SLOW COOK-Custom-High and set the time for 4 hours. Make sure the pressure release is on VENT.
  • Serve turkey meatballs over zucchini noodles or spaghetti squash, and top with freshly grated parmesan cheese!
