Rustic Garlic Mashed Potatoes


  • 2 pounds baking potatoes, scrubbed and cut into 1-inch pieces
  • 1 cup water
  • 1-¼ tsp salt divided
  • 1 tsp garlic powder
  • 2 tbsp butter, cut into small pieces
  • ¼ tsp black pepper
  • ¾ cup milk
  • Combine potatoes, water, 1 tsp salt and garlic powder in Instant Pot; mix well.
  • Secure lid and move pressure release valve to Sealing position. Press Pressure Cook or Manual; cook at High Pressure 8 Minutes.
  • When cooking is complete, use quick release. Add butter, remaining ¼ tsp salt and pepper. Gradually add milk, mashing with potato masher until desired consistency is reached.
