Pork Ribs in Roasted Salsa

Ingredients

  • 4 large Saladette tomatoes
  • ½ onion, cut into chunks
  • 2 cloves garlic
  • 3 serrano peppers or more
  • 2 tbsp or cubes vegetable broth
  • ½ bunch cilantro + 3 tbsp finely chopped for garnishing
  • ½ cup water
  • 3 lb (1.5 kg) pork ribs
  • Salt and pepper, to taste
  • avocado oil

INSTRUCTIONS

  1. Roast the tomatoes, onion chunks, garlic, and chiles. Let brown well, until skin looks moderately burned. Blend everything along with the broth, cilantro, and water.
  2. Season the ribs with salt and pepper.
  3. Place the stainless steel inner pot inside the Instant Pot®. Press Saute and when Hot appears, add avocado oil and put the ribs in. Let brown on all sides. If necessary, do so in parts so as not to pile up the meat. Once the ribs are seared, add the sauce. Bring to a boil, check the amount of salt, and press Cancel.
  4. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Meat/Stew, pressure level High, and set time to 20 Minutes.
  5. Serve, sprinkle with fresh cilantro and enjoy.
