Ingredients

  • 3 tbsp vegetable oil
  • ½ red onion diced
  • 3 cloves garlic
  • 1 cup ground coriander
  • 2 tbsp yellow chili pepper
  • 3 1⁄2 cups chicken broth
  • ½ cup corn kernels
  • ¼ cup red bell pepper
  • ½ cup carrot diced
  • 1 cup rice, uncooked
  • ½ cup peas
  • Mixed Seafood

INSTRUCTIONS

  1. Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set the time to 10 Minutes . Add onion, garlic and sauté for about 5 minutes. Then place the ground coriander and yellow chili pepper.
  2. Add the broth or water, the corn, pepper, carrots, and rice.
  3. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Soup/Broth and set the time to 15 Minutes.
  4. About 5 minutes before finishing, add the seafood mix and the peas.
  5. Serve hot, with lemon and rocoto pepper.
