Oriental Lentil Stew


  • 3 tbsp olive oil
  • 1 chive, finely sliced
  • 2 cups broccoli, raw and chopped
  • ½ zucchini, sliced and quartered
  • 1 cup oriental lentils, red
  • 1½ cups water
  • 2 tsp salt
  • ½ tsp garlic powder
  • Coconut husk chips
  • Place the stainless steel inner pot inside the Instant Pot® and add the olive oil, green onion, broccoli, and zucchini. Press Saute, pressure level High, for 5 Minutes. Stir constantly to prevent burning.
  • Add the lentils, water, salt, and garlic powder. Stir. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level Medium, and set time to 1 Minute.
  • When done cooking, press Cancel. Then turn the steam release handle to Venting. Once all steam has been released, open the lid.
  • Serve hot with coconut husk chips.
