Ingredients

  • 10 large eggs
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp avocado oil
  • 1 tsp mustard
  • 1/2 ripe avocado
  • pepper corns
  • 2-3 celery stalks for ears
  • 6 drops of green gel food coloring

INSTRUCTIONS

  1. Place trivet in the inner pot and add 2 cups of water,
  2. Place the eggs on the trivet, lock the lid and select Pressure Cook or Manual for 5 minutes. When cooking time is done, natural release for 5 minutes and then quick release the rest of the pressure.
  3. Drain eggs and immediately place in a bowl of ice water and peel.
  4. Cut eggs in half and take out the yolks. Cut a few of the whites in quarters for the top of the Yoda carriage. Set aside.
  5. Mix all ingredients very well with the yolks.
  6. Mix well or use a handheld mixer to achieve a smooth consistency.
  7. Place yolk mixture in a piping bag or Ziplock bag and cut a hole in the corner.
  8. Pipe a little into the pockets of the egg white halves. Pipe closer to the edge verses the middle. Add a small amount of to the back edge of egg to hold the top of the carriage.
  9. Add two tiny peppercorns as eyes and cut pieces of celery into triangles for the ears.
  10. Cover and refrigerate before serving.
