Cut the potatoes and sweet potatoes into large cubes. Put in the Instant Pot with enough water to submerge and add salt to taste. Press Pressure Cook for 4 Minutes. Drain and let cool slightly.
In a bowl, add the oil, grated garlic, paprika, salt, pepper, and parsley and mix well.
On the Instant Vortex control panel, press Air Fry, then set time to 8 Minutes and temperature to 355˚F (180˚C). Press Start.
Once this time is up, program for 5 Minutes more at 390ºF (200ºC).
