Herbes de Provence Potatoes and Sweet Potatoes with Greek Yogurt Dressing


  • 2 sweet potatoes yellow or orange
  • 2 white potatoes
  • 2 tbsp avocado oil
  • 1 large clove garlic
  • 1 tbsp paprika
  • 1 tbsp fresh parsley for garnishing
  • salt and pepper to taste
  • ½ cup plain greek yogurt
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 pinch of oregano powder
  • salt and pepper to taste
  • Cut the potatoes and sweet potatoes into large cubes. Put in the Instant Pot with enough water to submerge and add salt to taste. Press Pressure Cook for 4 Minutes. Drain and let cool slightly.
  • In a bowl, add the oil, grated garlic, paprika, salt, pepper, and parsley and mix well.
  • On the Instant Vortex control panel, press Air Fry, then set time to 8 Minutes and temperature to 355˚F (180˚C). Press Start.
  • Once this time is up, program for 5 Minutes more at 390ºF (200ºC).
  • Mix the ingredients for the yogurt dressing.
  • Serve the potatoes with the yogurt and enjoy!
