Healthy Sweet Potato Arepas


  • 2 sweet potatoes
  • ½ cup flour: rice, cassava, oat, or corn
  • 1 tsp extra-virgin olive oil
  • Salt and spices, to taste
  • Extra topping: cheese of your choice
  • Mash the sweet potato until pureed; incorporate the flour, olive oil, salt and spices, to taste, until forming a uniform masa.
  • Use your hands to form small balls and fill with cheese of your choice.
  • Using the Instant Vortex panel, press Bake, set the time to 8 Minutes and the temperature to 170°C. Flip the arepas and bake them again for 8 Minutes, until golden brown.
