Glazed Quarter Ham

  • 1 boneless quarter ham
  • 1/4 cup maple syrup
  • 1 tbsp brown sugar
  • 1 tbsp unsalted butter
  • Pinch ground cloves
  • Pinch cayenne pepper
Instructions
  • Preheat the oven on ROAST at 350°F and set the cooking time for 45 minutes. Line the cooking pan with aluminum foil.
  • Place the ham on another sheet of foil. Bring the foil up around the sides of the ham and crimp the foil shut at the top, so the ham is fully enclosed. Place it on the cooking pan.
  • Roast the ham in the preheated oven.
  • While the ham roasts, make the glaze on the stovetop: In a small saucepan over medium heat, combine the maple syrup, sugar, butter, cloves, and cayenne (if using). When the mixture comes up to a simmer, turn the heat down to low. Let simmer for about 5 minutes, stirring occasionally, until the glaze is slightly thickened. Remove from the heat.
  • When the cooking program ends, wearing heat-resistant mitts, remove the ham from the oven.
  • Unwrap the ham, taking care not to get burned by the steam or juices that may have accumulated under the foil. (Use an instant-read thermometer to check the temperature of the ham—it should be at least 140°F in the middle. If not, rewrap and roast the ham for a few more minutes, until it has come up to temperature.)
  • Preheat the oven once again on ROAST at 375°F and set the cooking time for 5 minutes.
  • Check the glaze: If it has solidified, return it to medium heat for a minute or so, until it is warm and pourable. Pour the glaze over the ham.
  • Roast the ham in the preheated oven for the final 5 minutes.
  • Wearing heat-resistant mitts, remove the ham from the oven. If it’s not already sliced, transfer it to a carving board and slice with a carving knife or chef ’s knife. Transfer slices to a serving platter or plates and serve warm.
