Ingredients

  • 1 lb (500 g) squid
  • 1 lb (500 g) of uncooked prawns
  • 1 lb (500 g) white fish strips
  • ¼ cup lemon juice
  • Salt and pepper to taste
  • 3 tbsp corn starch
  • 1 tbsp Dijon mustard
  • ½ cup red onion cut into strips
  • ⅓ cup red bell pepper, diced
  • ½ cup sweet corn
  • ¼ cup lemon juice
  • Salt to taste
  • Cilantro chopped to taste

INSTRUCTIONS

  1. Season fish and shellfish with the ingredients described and stir well.
  2. On the Instant Vortex control panel, press Air Fry, then set time to 12 Minutes and temperature to 365°F (180°C). Press Start.
  3. Add the batter and close the basket.
  4. While frying, mix the onion, red pepper, sweet corn, lemon juice, salt and chopped cilantro to make creole sauce.
  5. Serve the fried seafood with the creole sauce and more chopped coriander.
