Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 8 Minutes. Add the olive oil; when hot, sear the meat on both sides, add salt and pepper, remove from pot and set aside.
Without washing the bowl, add the white wine and scrape with a spoon for 1 Minute.
Press Cancel, return meat to the pot, along with the drippings left on the plate; add the parsley, mustard, and lemon juice.
Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set the time to 35 Minutes.
Once the time is up, press Cancel, turn the steam release handle and wait a few minutes before opening.
