Fit Granola


  • 1 tbsp coconut oil
  • 1 cup Almonds
  • ¾ cup peanuts
  • 2 tbsp pumpkin seeds
  • 3 tbsp cranberries
  • 3 tbsp flaxseed
  • ¾ cup coconut flakes
  • Melt the coconut oil in bain-marie. Set aside.
  • Place all the ingredients in a bowl.
  • Add the oil to the bowl and stir until the oil is well integrated with the rest of the ingredients.
  • On the Instant Vortex control panel, press Bake , then set time to 8 Minutes and temperature to 355ºF (180°C) . Press Start .
  • Once Add Food appears on the display, open the basket and put the mixture on the rack (some seeds will fall through the rack but this will not cause a problem). Close.
  • When Turn Food appears on the display, open the tray, stir the mixture, close again, and continue cooking until machine turns Off.
  • Remove and allow to cool. Serve with fruit and yogurt or store in glass container with airtight lid.
