Fasolakia (Green Beans and Potatoes in Olive Oil Tomato Sauce)


  • 15 oz diced tomatoes canned
  • 1 cup Water
  • 1/2 cup olive oil
  • 1 medium Zucchini
  • 1/2 bunch fresh parsley
  • 1 bunch fresh dill
  • 1 tsp Oregano Dried
  • 1 lb green beans fresh
  • 1 large onion
  • 2 potatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Set the Instant Pot on Saute while you prep all the ingredients so it starts to warm up.
  • Once everything is prepped, first pour in the diced tomatoes, water, and olive oil. Then add the rest of the ingredients to the pot and stir really well.
  • Once it's stirred well, put the top on the pot, and spin to lock it in. Then make sure the valve on top is set to "sealing".
  • Set the manual or pressure cook timer to 15 minutes.
  • Once the timer reaches zero, quick release the pressure.
