8-10 mini cucumbers or Persian cucumbers, washed and cut into spears
2 cups water
2 cups white vinegar
2 tbsp. kosher salt
2 tbsp. granulated sugar
2 tbsp. pickling spices
4 garlic cloves, smashed
1 large bunch fresh dill, torn
Instructions
Add water, vinegar, kosher salt, sugar, pickling spices, and garlic to the Instant Pot. Set the Instant Pot to Sauté on High/More for 5 minutes. Bring the brine to a gentle simmer. Stir occasionally until the salt and sugar dissolve completely, about 5 minutes.
While the brine heats, pack the cucumber spears and fresh dill into clean, sterilized jars.
Once the brine is ready, carefully pour the hot brine over the cucumber spears in each jar, filling each jar to submerge the cucumbers fully.
