Ingredients
  • 8-10 mini cucumbers or Persian cucumbers, washed and cut into spears
  • 2 cups water
  • 2 cups white vinegar
  • 2 tbsp. kosher salt
  • 2 tbsp. granulated sugar
  • 2 tbsp. pickling spices
  • 4 garlic cloves, smashed
  • 1 large bunch fresh dill, torn
Instructions
  • Add water, vinegar, kosher salt, sugar, pickling spices, and garlic to the Instant Pot. Set the Instant Pot to Sauté on High/More for 5 minutes. Bring the brine to a gentle simmer. Stir occasionally until the salt and sugar dissolve completely, about 5 minutes.
  • While the brine heats, pack the cucumber spears and fresh dill into clean, sterilized jars.
  • Once the brine is ready, carefully pour the hot brine over the cucumber spears in each jar, filling each jar to submerge the cucumbers fully.
