Basic Roasted Potatoes
The only thing basic about these roasted new potatoes is how easy they are. Substitute for red potatoes or golden potatoes if you can't find the seasonal new potatoes. Serve as a delectable side for any dinner dish!

Ingredients
  • 1 lb. new potatoes, quartered
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • ¼ tsp. paprika
  • Parsley, chopped, for garnish
Instructions
  • Pre-heat Air Fryer to 400°F / 205°C.
  • Rinse potatoes and pat dry.
  • Cut into quarters or approximately 1 ½” pieces, then toss with oil and salt.
  • Once the air fryer is heated, place seasoned potatoes in the fry basket in an even layer (you may have to cook in batches, depending on your air fryer).
  • Air Fry for 20 minutes, giving the basket a shake halfway through.
  • After cooking, transfer potatoes to a large mixing bowl and toss with chopped parsley and/or any other additional herbs. Serve hot and enjoy!
