Ingredients
  • 4 large flour tortillas
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 cup shredded Mexican cheese
  • 1 cup cherry tomatoes
  • 4 scallions
  • 1 head romaine lettuce
  • 16 oz frozen corn
  • 2 jalapeños
  • ½ red onion
  • Sour cream
  • Limes, for serving
  • Fresh cilantro, for serving
  • Organic vegetable oil spray
Instructions
  • Begin by making the taco shell. Find a small heatproof mixing bowl that fits inside of the air fryer basket. Invert the bowl and spray with vegetable oil spray. Place a large flour tortilla on top and allow the edges to drape over the sides forming a shell.
  • Preheat the Air Fryer to 385°F / 195°C. Remove the basket shelf and add the prepared mixing bowl with the tortilla. Air Fry for 10-12 Minutes, or until the tortilla is crisp. Remove from the basket and carefully peel off the mixing bowl. Set aside and repeat as necessary for remaining taco shells.
  • In a small mixing bowl combine the ground beef with the taco seasoning. Add the ground beef on one side of the air fryer basket. On the other side add the frozen corn. Air Fry at 385°F / 195°C for 13-15 Minutes, breaking up the ground beef occasionally while cooking.
  • To assemble the taco salad, place the shredded lettuce in the taco shell. Top with ground beef, air fried corn, tomatoes, red onion, jalapenos, cilantro, scallions, and cheese. Drizzle with fresh limes. Enjoy!
