We’re addicted to this easy air fryer taco salad. Make sure to find a heatproof mixing bowl that can be
placed in an oven to form the taco shell. Perfect for meal prep and easy weeknight meals!
Begin by making the taco shell. Find a small heatproof mixing bowl that fits inside of the air fryer basket. Invert the bowl and spray with vegetable oil spray. Place a large flour tortilla on top and allow the edges to drape over the sides forming a shell.
Preheat the air fryer to 385°F / 195°C on both sides. Remove the basket shelf and add the prepared mixing bowl with the tortilla. Air Fry for 10-12 minutes, or until the tortilla is crisp. Remove from the basket and carefully peel off the mixing bowl. Set aside and repeat as necessary for remaining taco shells.
In a small mixing bowl combine the ground beef with the taco seasoning. Add the ground beef on one side of the air fryer basket. On the other side add the frozen corn. Air Fry at 385°F / 195°C for 13-15 minutes, breaking up the ground beef occasionally while cooking.
To assemble the taco salad, place the shredded lettuce in the taco shell. Top with ground beef, air-fried corn, tomatoes, red onion, jalapeños, cilantro, scallions, and cheese. Drizzle with fresh limes. Enjoy!
