Make the marinade. In a large bowl, combine the melted butter, lemon juice, Dijon mustard, salt and olive oil. Add the pork chops, refrigerate, and marinate for 30 Minutes, or up to overnight.
Preheat the Air Fryer to 400°F / 205°C. Place the pork chops in the basket and air fry for 12-13 Minutes. Set aside and rest for at least 10 Minutes before slicing.
In a large mixing bowl, toss together the diced apples, red onion, thyme leaves, and olive oil.
Place in the air fryer basket and Air Fry at 400°F / 205°C for another 15 Minutes, stirring halfway. Serve with pork chops and enjoy!
