Ingredients

  • 1 1/2 cup cups vegetable broth
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup nondairy butter
  • 3 cloves garlic
  • 1/2 cup coarsely chopped yellow onion
  • 1 cup coarsely chopped shiitake mushrooms
  • 1/8 tsp dried sage
  • 1/8 tsp dried rosemary
  • 1/8 tsp ground black pepper
  • 15 oz white beans
  • 1/4 cup nutritional yeast flakes

INSTRUCTIONS

  1. In the order listed, add 1 1/4 cup water, soy sauce, nondairy butter, garlic, onion, mushrooms, safe, rosemary, pepper and white beans to the Instant Pot Ace blender. Pour the remaining 1/4 cup water over everything.
  2. Choose the #1 soup function (20 minutes).
  3. Once done, remove the lid and add 1/4 cup nutritional yeast flakes. Cover and pulse for about 8 to 10 seconds (you want it to thick and creamy but slightly chunky.)
