Ingredients
  • 1 garlic clove, whole
  • 2 cups dry white wine
  • 1 tbsp lemon juice
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded Emmental cheese
  • 3 tbsp cornstarch
  • Salt, to taste
  • Black pepper, to taste
  • Parboiled baby potatoes
  • Steamed broccoli
  • Sliced salami
  • Cubed sourdough bread
  • Carrot sticks
Instructions
  • Rub the inside of the Instant Pot liner with the whole garlic clove to infuse flavor, then discard the garlic.
  • Set the Instant Pot to Sauté mode. Pour in the white wine, lemon juice, and add the garlic clove. Heat until gently simmering, about 2-3 minutes. Discard the garlic clove.
  • In a separate bowl, toss the shredded Gruyère and Emmental cheeses with the cornstarch to prevent clumping. Gradually add the cheese mixture to the pot, whisking constantly until fully melted and smooth.
  • Once the fondue is smooth and creamy, season with salt and black pepper to taste. If too thick, add more white to create a thinner consistency.
  • Switch the Instant Pot to the Keep Warm setting to maintain the perfect serving temperature.
  • Serve immediately with parboiled baby potatoes, steamed broccoli, sliced salami, cubed sourdough bread, and carrot sticks for dipping. Enjoy!
