One-Pot Pasta with Creamy Vodka Sauce

Ingredients

  • 1 tbsp. olive oil
  • ½ lb. ground beef
  • ½ small onion, diced
  • 2 cloves garlic, minced
  • ½ tsp. red pepper flakes (optional)
  • 2 tbsp. tomato paste
  • ¼ cup vodka
  • 8 oz. short pasta of your choice (penne, rigatoni, fusilli, etc.)
  • 2 cups low-sodium chicken broth
  • ½–1 tsp. salt (adjust to taste)
  • ½ cup heavy cream
  • ⅓ cup grated parmesan cheese
  • Parsley flakes, as desired

Creamy, cozy, and full of flavor—the Instant Pot® does all the work: no draining, no babysitting, just a creamy sauce that clings to every bite of pasta. Perfect for weeknight dinners or when you want comfort food fast.

INSTRUCTIONS

  1. Set the Instant Pot to Sauté mode on High. Heat the olive oil and sauté the ground beef.
  2. Add the onion and garlic to the pot and sauté for 2-3 minutes.
  3. Stir in the red pepper flakes and tomato paste and cook for 1–2 minutes.
  4. Pour in the vodka and deglaze the bottom to prevent the burn warning. Let simmer for 1 minute.
  5. Top with dry pasta of your choice and pour in broth. Make sure pasta is mostly submerged, but do not stir.
  6. Seal the Instant Pot, Pressure Cook on High for 5 minutes, and then quick-release.
  7. Turn on Sauté mode again and stir in the heavy cream. When the heavy cream is hot, stir in the Parmesan cheese to thicken.
  8. Garnish with parsley flakes and enjoy!
