Ingredients

  • 2 thick pita breads, cut in half
  • ½ lb. ground beef (90/10% fat ratio)
  • ½ small yellow onion, minced
  • 2 tbsp. fresh parsley, chopped
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • ½ tsp. kosher salt
  • ½ tsp. freshly ground black pepper
  • Pinch of cinnamon
  • 2 tbsp. extra virgin oil
  • For the Greek Yogurt Dipping Sauce
  • 3⁄4 cup plain Green yogurt
  • 1 clove garlic, grated or finely minced
  • 1 tbsp. lemon juice
  • 1 tbsp. extra virgin olive oil
  • Salt and black pepper, to taste

Crispy, meaty, and ready in minutes. Paired with a cool garlic yogurt sauce, it’s the perfect quick lunch or appetizer.

INSTRUCTIONS

  1. In a small bowl, whisk together the yogurt, minced garlic, lemon juice, and olive oil. Season with a pinch of salt and pepper to taste. Refrigerate until ready to serve.
  2. In another small bowl, combine the ground beef, onions, parsley, salt, and spices. Mix with your hands until sticky and well-combined.
  3. Open your pita halves. Press the raw meat mixture inside, spreading it all the way to the edges in an even, thin layer (about ¼ inch thick). Pro Tip: The meat cooks inside the bread. If the layer is too thick (like a burger patty), it won't cook through before the bread burns. Think "meat veneer," not meatball. 
  4. Brush the outside of the stuffed pitas generously with olive oil. This ensures the bread turns golden-brown and crunchy instead of just dry.
  5. Place the pitas on the InstantHeat™ air fryer basket in the middle rack. Select Air Fry at 400°F / 205°C for 14-16 minutes.
  6. Let them rest for 2 minutes (they will be hot!). Dip the crunchy, meaty triangles into the cool garlic yogurt sauce.
