Steamed Artichokes with Lemon Aioli


  • 1/3 cup mayonnaise
  • zest and juice from 1/2 medium lemon
  • 2 garlic cloves
  • 1/8 tsp salt
  • 1 lb artichoke
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • In a small bowl, combine lemon aioli ingredients and refrigerate until ready to use.
  • Add water to the Instant Pot® and insert steamer basket. Place artichokes evenly in basket. Lock lid.
  • Press the Manual or Pressure Cook button and adjust time to 8 minute. Quick-release
  • Transfer artichoke to a serving dish and season with salt and pepper. Drizzle with lemon aioli. Serve warm.
