Spinach Croquettes

Ingredients

  • 3 eggs
  • 2 egg whites
  • ¼ cup low-fat milk
  • 2 tsp minced garlic
  • ½ onion
  • 5 ⅓ oz (150 g) spinach leaves
  • 1 cup oat flour
  • ½ lb (180 g) light mozzarella cheese
  • 1 tbsp Parmesan cheese
  • Salt, oregano, black pepper and other spices
  • 2-3 tbsp extra oatmeal flour to sprinkle on the outside so it doesn't stick to your hands

INSTRUCTIONS

  1. In a bowl, mix all the liquid ingredients. Gradually add the flour, diced onion, finely sliced spinach, mozzarella cheese, Parmesan cheese, salt and spices to taste.
  2. Once the mixture thickens, use your hands to shape small balls and sprinkle them with the extra oatmeal to prevent them from sticking.
  3. On the Instant Vortex control panel, press Air Fry, set the time to 15 Minutes and the temperature to 340°F (170°C). Press Start.
  4. Once the Instant Pot has preheated, add the croquettes to the basket and close.
  5. Once the time is up, remove the croquettes and insert them again, but turned over for about 5 Minutes at 340°F (170°C) so that the bottom part browns.
