Ingredients

  • 4 lbs baby pork ribs
  • 2 tbsp smoked paprika
  • 1 tbsp siracha powder
  • 1 tbsp mustard powder
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp kosher salt
  • Cooking spray oil
  • 1/4 cup honey
  • 5 red thai chilies
  • 3 lime strips
  • 1 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar

INSTRUCTIONS

  1. Select SAUTÉ-Low and set the time for 30 minutes. Press START.
  2. Add the honey, Thai chiles, and lime strips to the Inner Pot. Once the honey boils press CANCEL, and transfer the honey to a bowl. Discard the lime strips. Let the honey cool down completely.
  3. Once the honey is cold, add in the apple cider vinegar and the fresh lemon juice.
  4. In a small bowl, combine the smoked paprika, siracha powder, mustard powder, black pepper, and garlic powder.
  5. Place the pork ribs on top of a cutting board and pat them dry with paper towels. Turn the ribs over to remove the membrane.
  6. Season the ribs back and front with kosher salt, coat the ribs in the dry rub, patting it all over on both sides of the ribs.
  7. Lightly coat the Inner Pot with cooking spray oil, then place the ribs inside, standing them up in a circle.
  8. Close the Pressure Cooking Lid on the pot and set to VENT.
  9. Select SLOW COOK-Custom-Less for 10 hours. Press START.
  10. When program is complete, carefully open the Pressure cooking Lid. Remove the ribs from the inner pot. Place them on top of a cutting board and set aside.
  11. Using a brush or a spoon drizzle the honey all over the ribs. Broil the ribs for about 2 to 3 minutes on each side or until caramelized. Rotate them to make sure that all the surfaces get caramelized.
  12. Serve with some extra honey on the side and enjoy!
