Slow Cooked Pork Belly Bites

Ingredients
  • 2 1/2 lbs pork belly
  • 6 cloves garlic
  • 1 1/2 cups beef stock
  • 1/2 cup tomato sauce
  • 1 tsp Sweet chili sauce
  • 1 tsp soy sauce
  • 1 tbsp honey
  • 1 tsp red chili flakes
  • scallions
Instructions
  • Place the pork belly in the inner pot, add in the mashed garlic and beef stock.
  • Close the Pressure Cooking Lid on the pot and set to VENT.
  • Select SLOW COOK-Custom-High for 5 hours.
  • When done, carefully open the Pressure Cooking Lid. Remove the pork from the inner pot, place it on top of a cutting board and pat dry, cut in 1-inch cubes. Discard the liquid and rinse the inner pot.
  • Stir together the tomato sauce, sweet chili sauce, soy sauce, honey and red chili flakes in the inner pot. Add pork belly cubes and stir to coat evenly.
  • Close the Pressure Cooking Lid on the pot and set to VENT.
  • Select SLOW COOK-Custom-High for 1 hour. When done carefully open the Pressure Cooking Lid.
  • Serve and enjoy!
Notes
  • Optional: If you want a little bit of crispiness and enhance the flavor, Air fry the pork belly bites at 400 F for 6 minutes.
