Ingredients

  • 5 lbs russet potatoes
  • 1 yellow onion
  • 3 eggs
  • 1 tbsp salt, plus more for garnish
  • 1 tsp baking powder
  • 2 cup all-purpose flour
  • Olive oil spray
  • 1 cup applesauce
  • 1 cup sour cream

INSTRUCTIONS

  1. Shred potatoes on a box grater into a large bowl filled with cold water. Continue until all potatoes are shredded.
  2. Soak the shredded potatoes in cold water for 30 Minutes. Pour through a fine mesh strainer and squeeze out any remaining liquid. The potatoes should be very dry. Add to a large, dry mixing bowl. This should yield about 8 cups.
  3. Shred the yellow onion on the box grater. Add the onion, eggs, salt, baking powder, and flour to the potato bowl. Mix until combined.
  4. Preheat the 6-in-1 Grill on the Air Fry Function at 400°F. Lightly coat the air fryer tray with olive oil spray.
  5. Dollop ½ cup of latke batter into a circle, keeping each latke one inch away from another. Do not crowd the air fryer tray. Spray the tops with olive oil spray.
  6. Air Fry at 400°F for 10 – 12 Minutes, until golden brown and slightly crispy. Sprinkle with salt immediately after cooking. Continue cooking in batches until all latkes are done.
  7. Serve latkes warm with a side of applesauce and sour cream. Enjoy!
