Paneer Bites

Ingredients
  • 40 g mint leaves
  • 20 g coriander leaves
  • 2 tsp ground cumin
  • 1 ½ amchur powder
  • 1 clove garlic
  • 1 tbsp ginger grated
  • 1 green chilli
  • ½ red onion
  • 3 tbsp water
  • ½ lemon, juiced
  • 1 ½ tsp salt
  • 500 g paneer cheese
  • 120 g all-purpose flour
  • 150 g corn flakes crushed
  • 2 egg
  • Cooking spray as needed
Instructions
  • Add all chutney ingredients to a blender and blitz into paste consistency, then season to taste with salt. Add more lemon juice if needed. Set aside.
  • Place the paneer on a chopping board with the short side towards you. Cut it down the middle into two long thin rectangles. Turn the paneer 90 degrees, so that the paneer rectangles are horizontal, then slice them into 2cm (3/4 inch) thick strips.
  • Take a strip of paneer, add a little chutney on top, then sandwich it with another strip to enclose the chutney. Repeat until all the strips are finished.
  • To a bowl add your flour, then whisk in the cumin, salt and amchoor.
  • In another bowl add your finely crushed cornflakes.
  • Whisk eggs in a final bowl with water.
  • Dip a paneer chutney sandwich into the seasoned flour, then into the egg mixture and finally into the cornflakes, pressing the crumbs into the paneer until it’s well coated. Set aside. Repeat with all the paneer and chutney sandwich bites.
  • Once all the paneer is coated, place the paneer bites into the air fryer chamber. Spray the bites with cooking spray then close the chamber.
  • Select air fry, set the temperature to 180°C / 355°F, and the timer to 10 Minutes.
  • Cook the paneer bites, turning half way to ensure even cooking, until crisped and golden.
  • Remove the paneer bites and serve immediately with green chutney or your favourite dipping sauce.
