Mushrooms with Za'atar & Jocoque


  • 8 mushrooms
  • 3 tbsp avocado oil
  • 2 tbsp Za’atar
  • 1 tbsp sumac
  • ½ cup jocoque cheese
  • 2 tbsp tahini
  • 2 tsp Sriracha
  • 1 tbsp sunflower seeds
  • 1 tbsp olive oil
  • 3 sprigs parsley
  • Shred the mushrooms into strips. Place them in a bowl and season with avocado oil and zaatar. Stir very well, until all are well basted in oil and seasoned.
  • On the Instant Vortex control panel, press Air Fry, then set time to 6 Minutes and temperature to 355˚F (180˚C) . Press Start.
  • When Add Food appears on the display, remove the basket and arrange the mushrooms. Put the basket back in the Instant Vortex.
  • When Turn Food appears on the display, turn the mushrooms over.
  • As soon as the marked time is over, remove the mushrooms and set aside
  • Serve the jocoque first in the center of the plate. Place the mushrooms directly on the jocoque.
  • Now combine the tahini with the sriracha and spoon over the mushrooms (all over the dish).
  • Finally, garnish with olive oil, sunflower seeds, and a few parsley leaves.
