Using a rolling pin, flatten the croissants until they are very thin.
Preheat the air fryer to 400˚F / 205 ˚C. Add two croissants to the inner basket. Air Fry for 6-8 minutes until crispy, flipping halfway.
Add half the provolone to the two croissants and Air Fry for an additional 2-3 minutes until melted. Repeat with remaining croissants and cheese. Set aside.
On a large cutting board, add the romaine lettuce, salami, red onion rings, sliced tomatoes, Italian seasoning, and giardiniera. Chop all the ingredients until cut into bite size, uniform pieces. Drizzle with olive oil, red wine vinegar, and salt. Toss until well-seasoned.
Spoon the salad in between two croissant pieces. Slice in half to serve and enjoy!
