Ingredients

  • 1 lb (500 g) crayfish, peeled and rinsed
  • ½ onion diced
  • 1 small head garlic (10 cloves garlic)
  • 2 tomatoes, peeled and diced
  • 1 cup crayfish shell or fish broth
  • 3 tbsp ají amarillo puréed, Peruvian yellow pepper
  • chopped cilantro
  • Optional: chopped aji limo, lemon drop pepper

INSTRUCTIONS

  1. Place the inner pot inside the Instant Pot. Press Saute and set time to 15 Minutes. Add the onion and garlic until golden brown.
  2. Add the tomatoes and ají amarillo. Sauté lightly and add the crayfish. Change the setting to Meat/Stew, set time to 5 Minutes. Add the broth, cilantro and ají limo (optional).
  3. Lastly, serve with rice or other side dish of your choice.
